Ingredients

2 eggs

1 lemon for serving

1 cup of all-purpose flour

1/2 tsp salt mayonnaise or aioli sauce for serving (optional)

1 1/2 tsp baking powder

3/4 cup of sparkling water, cold olive oil for frying

1 pound fresh calamari rings

 

Instructions

To begin, crack the eggs into a bowl and mix them vigorously until they are thoroughly blended.Stir in the dry ingredients (flour, salt, and baking powder). Maintain a healthy blend.

Combine once more after adding the carbonated water. While you’re preparing the calamari rings and/or heating the oil, put this in the fridge.

  Frying in a Battered Coating:

To prepare, warm up some oil in a frying pan on medium heat.

As soon as the oil begins to bubble, dip each ring of calamari into the batter and fry it until it is cooked through and golden brown on both sides. To prevent the battered rings from sticking to the pan, add only a few at a time. Do things in waves.

Transfer the freshly cooked calamari to a plate fill with paper towels to absorb any remaining oil while frying the remaining calamari.

Lemon wedges and additional sauces can be served on the side.
