Ingredients

  Calamari:

1 cup of flour

1 pound calamari tubes (nvhdv is fine)

6 ounces of club soda

vegetable oil for frying

1/2 tsp cayenne

3 dashes salt and pepper

sesame seeds for garnish (optional)

  Sweet & Spicy Sauce:

6 tbsp honey

4 tbsp chili garlic sauce

1/2 tsp Asian sesame oil

 

Instructions

To prepare the calamari, cut the tubes into 1/4-inch rings. Put the rings in a medium bowl and cover them with club soda. Let them rest for 10 minutes. While they are soaking, mix salt, pepper, and flour in a separate bowl.

In another bowl, mix chili garlic sauce, honey, and sesame oil. Drain and dry the squid. Coat each calamari ring with the flour mixture and set it aside on a plate. A deep, heavy pot with 1 to 2 inches of oil heated to 375 F.

A quarter of the squid should be golden-brown after 2 minutes in the oil. Repeat until all the calamari is cooked. Don’t crowd too much.

When you take it out, put it on a plate with a paper towel and gently blot it. Repeat.

Toss with the sauce you’ve already made and sprinkle with sesame seeds if you have them, or serve the sauce on the side. Enjoy!!
